No churn Christmas ice cream
If you are taking part in this year's Advent Challenge to raise funds for The Children's Society, you will have seen that one of the challenges is to make a no-churn Christmas ice cream!
It's a really simple recipe using ingredients that may already be in your kitchen cupboard. The addition of alcohol will prevent it from freezing solid, but if you're making it for children you can leave it out. Just remember to take the tub out of the freezer 20 minutes before eating.
Ingredients
Large jar of mincemeat (411g)
60 ml brandy (optional)
600 ml double cream
1 tsp vanilla essence
Tin of chilled sweetened condensed milk (397g)
Instructions

Mix the mincemeat with the alcohol (if using) in a small bowl.

Whisk the cream and vanilla essence in a large bowl, until soft peaks form.

Then add the chilled condensed milk, and whisk together until it's all thick.

Finally add the mincemeat and fold in gently.

Put it in a freezer-safe container and freeze overnight.
